Well, it depends on who you ask.  Generally everyone agrees that this is a version of the English word "pudding".  Poutine is a common Canadian dish originating in rural  Quebec around 1950.  It is  made with french fried potatoes topped with a light brown gravy and cheese curds. There are many variation of the dish.  Some restaurants add chicken, bacon or some other smoked meat.  More upscale venues use a three pepper sauce, merguez sausage, foie gras, caviar and even truffle.
