What To Do With Leftover Turkey

If you roast turkey for Thanksgiving dinner you know you will have left-overs.  You will love those hot turkey sandwiches, cold sandwiches and turkey salad.  Turkey noodle soup will warm your tummy during this weeks’ cold weather. But, here’s something a little more exotic you might want to try.
Turkey Curry over White Rice
Ingredients:
·        2 tablespoons curry powder
·        4 tablespoons butter
·        1 1/2 cups chopped onion
·        2 tablespoons flour
·        1/2 teaspoon ground ginger
·        2 cups chicken broth
·        1 can (8 to 9 ounces) crushed pineapple, undrained
·        3 cups cooked diced turkey
·        2 tablespoons lemon juice

Preparation:

In a large skillet, heat curry powder in butter, stirring, for 2 minutes. Stir in onions; continue cooking, stirring frequently, until onions are softened. Blend in flour and ginger; add chicken broth and pineapple. Heat to boiling; simmer uncovered 5 minutes.
Stir in turkey. Cover and simmer for 10 minutes longer, or until heated through. Stir in lemon juice. Serve with hot cooked rice.  Serves  4.

Holiday Travel Advisory



A major winter storm will unfold across the East Coast Tuesday and Wednesday, threatening to create a nightmare for the millions of Thanksgiving holiday travelers--even those elsewhere in the U.S.  This is the same storm that unleashed snow and ice across New Mexico and the southern Plains over the weekend will now spread heavy rain across the South and East.  Substantial snow will spread northward from the spine of the Appalachians to the St. Lawrence Valley and far into northern New England.
The Wednesday before Thanksgiving will be the busiest single day of travel with 37 percent of travelers departing for trips Nov. 27.  Current indications put the weather corridor from the spine of the Appalachians to southwestern Quebec and far northern New England at risk for travel-disrupting snow from this midweek winter storm.
The storm will be mostly a snow event across northwestern Pennsylvania and western New York to west of Montreal, Canada. The worst of the snowstorm may center on Bradford, Pa.; Rochester, N.Y.; Ottawa, Ontario. The snow will total 6 to 12 inches in this zone with more than a foot in some places.
So, get ready by stocking up and staying in.  You might just need to save that turkey dinner for the weekend when the weather will much more suitable for travel.

Where did the tradition of wishing on the wishbone originate?


The Etruscans, an ancient civilization in Italy were the first to begin this.  They  were really big fans of chickens and believed in their ability to predict the future. They would leave the wishbone out to dry and people would touch the bone, which is technically the furcula, and make wishes. This practice carried over to the next residents of the area, the Romans. They proceeded to start breaking the wishbones. They took that practice with them when they traveled north to what is now England. The English adopted it, and the settlers brought the tradition with them to the new world, where they applied it to turkeys, because that's what was available. So, do the Canadians do the same thing when they celebrate their Thanksgiving Day in October?  Well, they do have roast turkey and all the trimmings…..and yes, many have picked up the tradition of wishing with the ‘wish bone’.

November 22nd Marks Anniversary of JFK Assassination

November 22nd will mark the 50th anniversary of the assignation of Pres. John F. Kennedy.  As with many major events in our history people are talking this week and remembering where they were when the president was killed.  Just like when the Twin Towers fell on 9-11-2001, we all were frozen for that moment and as the years pass we often stop and reflect on these days.  The older you are, the more of these moments you have to look back on.  All month special programming has aired on television about this event.  Some looking into the many conspiracy theories; some a historical perspective on “What if?”
You may want to take in a couple of these programs as you reflect.
On Nov. 22nd at 9 p.m., NBC will air a two-hour special, hosted by Tom Brokow, called Where Were You?
On Nov. 21 at 7 p.m., the Discovery Channel will air JFK: The Lost Tapes featuring rarely-heard footage of witness testimony, news and radio broadcasts, and police/military communications.

The History Channel will air JFK Assassination: The Definitive Guide, on Nov. 22, at 8 p.m.

The Full Moon

Easy Stuffing Recipe



We hope you are having a super weekend in Montreal! With the holiday season being right around the corner, we wanted to share with you this easy recipe for stuffing. You can even make it the night before, place the mixture in the refrigerator, and easily pop it in the oven when ready. It works as a perfect side dish for turkey, ham, fish, or chicken. Enjoy!

Stuffing Recipe

1 stick unsalted butter
1 large onion diced
6 stalks of celery diced
3 bay leaves
Ground sage and poultry seasoning to taste
Salt and pepper to taste
1 bag of stuffing bread cubes
2 eggs
Chicken stock as needed for moisture

Sauté onion and celery in melted butter. Add spices. Cook on medium heat stirring often until translucent. Put bread cubes in large bowl, add onions/celery mixture to bowl and let cool. Add 1 cup of stock and the two eggs. Mix well…add more stock as needed to make a wet mixture. Bake in preheated oven at 350F for 45 minutes. The dish should be covered in the oven to retain moisture. If you like the top to be crispier, remove cover the last 10 minutes and check often to make sure it doesn’t burn. This can be prepared the night before and kept in the refrigerator (it’s even tastier).
